I found a utility called WinToUsb that allowed me make a Win10 USB bootable version and see the problem from the outside in.

While I was praying my message wouldn't fall on deaf ears, I got to work making some diagnostic tools to try and fix things myself. I found Angerwound's email, and fired him off a message explaining my predicament and pleading for some assistance in getting out of the hole I was in. Luckily, I had another computer around I was borrowing from a friend and as I sat there panicking in the wees hours of the morning I got to work on a plan. I immediately realized what had happened, somehow the tool had detected the NVMe drive as an external USB device and patched it. Tried safe mode, laptop's recovery mode, nothing would work. Something not working right, whatever - reboot the computer. This time is was showing two drives detected. After replugging the drive in and it not showing up in Windows, and reopened the app to check the status. Did a quick google search for the tool and downloaded it, connected my xbox drive up and patched away. I am using a brand new Razer Blade 15 gaming laptop with a NVMe solid state drive. I ordered their recommended Sabrent connector off Amazon, and I decided I wanted to run CrystalDiskMark on the drive to compare my current USB enclosure with the new one. I have been using a Samsung 860 EVO 1TB drive as external storage on my One X / Series X for a while, and after reading an interesting article Digital Foundry posted about SSD benchmarks on the Xbox, they recommended investing in a good USB connector to tap into that power. Does exactly what it was designed to do - does a quick patch to storage drives formatted for Xbox, so they are readable on PC - it's the exact same NTFS format. I have been using AngerWound's ( /u/FatherOfAwesome ) fantastic Xbox One External Storage Device Converter for about 6.5 years now with no issues.
